how do you change the u-joints between the engine and hydraulics? any help would be appreciated.

There is a U-joint there? Are you sure it isn't a Lovejoy type coupling using a spider or chain?
I've seen several machines with a double u-joint and a slip spline between the flywheel and the pumps or powershift.
